Mama's Pound Cake


After experimenting with many different pound cake recipes, this is the BEST I've found...

Ingredients

  • 1/2 pound (2 sticks) butter, plus more for pan
  • 1/2 cup vegetable shortening
  • 3 cups sugar
  • 5 eggs
  • 3 cups all-purpose flour, plus more for pan
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon baking powder
  • 1 cup milk
  • 1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F.
With a mixer, cream butter and shortening together. Add sugar, a little at a time. Add eggs, 1 at a time, beating after each addition. Stir dry ingredients together in a bowl and add to mixer alternately with milk, starting with the flour and ending with the flour. Mix in vanilla. Pour into a greased and floured tube pan and bake for 1 to 1 1/2 hours, until a toothpick inserted in the center of the cake comes out clean.

Black Russian Cake




Ingredients

  • Cake

  • 1 (18.25 ounce) package moist yellow cake mix
  • 1 (5.9 ounce) package instant chocolate pudding mix
  • 4 eggs
  • 1/2 cup white sugar
  • 1 cup vegetable oil
  • 1/4 cup vodka
  • 1/4 cup Kahlua
  • 3/4 cup water

Glaze
  • 1/4 cup Kahlua
  • 1 cup confectioners' sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  2. In a large bowl, combine the cake mix, pudding mix, eggs, white sugar, oil, vodka, 1/4 cup Kahlua, and water. Beat for four minutes. Pour batter into prepared Bundt pan.
  3. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until toothpick inserted in center of cake comes out clean. Cool on a rack.
  4. Make a glaze by combining 1/4 cup Kahlua and 1/2 cup confectioners' sugar. Turn cake over on a cake plate. Poke cake several times with a fork. Cover with glaze, and dust with remaining 1/2 cup confectioners' sugar.
